Pecan Crusted Chicken

Ingredients



4 boneless skinless chicken breasts
½ cup pecans, chopped
2 teaspoons lemon zest
½ teaspoon salt
1/8 teaspoon cayenne chili
a few grinds of fresh black pepper
1 egg, beaten
2 tablespoons water

Instructions



Pre heat oven to 450 F
In a shallow bowl beat the egg and water.
In a food processor add the nuts, lemon zest, salt, pepper and chili. Pulse until the nuts are coarse like bread crumbs. Place on a plate.
Rinse and dry the chicken breasts. Put them into the egg mixture and coat all sides of the chicken.
Then put into the nut mixture and coat all sides.
Place in a casserole dish and pat any left over nut mixture on top of the breasts.
Bake for 15-18 minutes until the chicken reaches 165 degrees F.
Pull out of the oven, make a foil tent and let rest 10 minutes and then serve.
